Indian Almond Milk – Basundi

Makes 4 small cups
Generally this rich drink is made with butter and cream. However, I’ve turned it into a healthier treat that can be drunk hot in the winter and cold during the summer months. I’ve prepared this using evaporated milk for a creamy beverage minus the sugar. Pistachios contain a high amount of copper which assists in the absorption of iron into the body from food sources.
Ingredients:
400g evaporated milk
The seeds of 4 cardamom pods, ground
8-10 saffron strands
1 tbsp ground almonds
6 pistachio nuts, chopped
Method:
In a small saucepan, place the evaporated milk and heat gently for 3 minutes.
Then add the cardamom seeds followed by the saffron, almonds and pistachio nuts and stir for 2 minutes.
Place in small shot glasses and serve hot or chilled.
