Indian Bread and Butter Pudding – Double ka Meetha

Double ka Meetha is an eggless baked dish that is also known as Shahi Tukra. Slices of bread are lightly fried and then immersed in a richly spiced milk that is sweetened either with condensed milk or sugar. It’s a dish that can be eaten once in a while or on a special occasion.
Ingredients:
1 tbsp unsalted butter, plus extra for buttering bread
8-10 bread slices or 4 brioche buns
1 x 405g tin light condensed milk
250ml milk
8-10 saffron strands
the seeds of 5-6 green cardamoms, crushed
1/2 tsp saffron
1 tbsp rose water (optional)
6-8 almonds, crushed
8-10 pistachio nuts, crushed
10-12 almonds and raisins
Method:
Preheat the oven at 180C/350F/gas 4.
Butter the bread pieces on either side.
Heat a frying pan on a medium heat and add 1 tbsp of butter. When it sizzles, add the bread pieces and fry them till they are golden and have crisp edges.
Set aside.
Prepare the ‘eggless saffron milk’. Heat up a saucepan and pour in the condensed milk and stir for a few seconds. Make sure it doesn’t burn at the bottom of the pan. Add the saffron strands and the cardamom and mix well.
Simmer for about 3 minutes. Mix in the rose water, if using.
Lightly butter the inside of an oven proof dish. Arrange the pieces of bread in overlapping rows. Pour the flavoured condensed milk over the bread. Sprinkle over the nuts and bake in the oven for 10-15 minutes.
