Cooking for the guests at the British High Commission appeared to be a daunting task but it was comforting to know that everyone loved 'naughty' foods such as these potato wedges with a smattering of chilli. Just like pakoras or onion bhajis, it is advised not to eat these everyday.

potato_wedges_mediumIngredients:

500g potatoes
1 tbsp sunflower or olive oil
¼ tsp salt
¼ tsp freshly ground black pepper
¼ tsp chilli flakes

Preparation:

Preheat the oven to 200C/400F/Gas 6.
Wash and dry the potatoes, but don't peel them. Cut the potatoes into large wedges and place into a bowl.
Add the remaining ingredients to the bowl and mix well. Tip the potatoes onto a baking tray.
Transfer the potatoes to the oven and bake until golden-brown and cooked all the way through which takes about 30-40 minutes.
Serve the potatoes hot from the oven with the caramelized onion mayonnaise.
