salmon_gralic_chilli_small_IMG_1990This is a simple dish which only requires the chopping of the garlic and the coriander leaves. It might be a nice way to introducing oneself to a couple of culinary techniques which are marinating - the method of soaking food in a seasoned liquid mixture before cooking and chopping or crushing garlic. You can slip off the skin with a knife before serving.

Serves 2

Ingredients:

For the marinade -
1/2 tsp chilli powder
2 tbsp olive oil
1/2 tsp turmeric
1 tsp lemon juice
1/4 tsp black pepper

2 cloves garlic, crushed or finely chopped

2 salmon steaks, approximately 175-200g each in weight
A few coriander leaves, washed and chopped for garnish

Preparation:

Preheat the oven to 180C.

Cover a baking tray large enough to hold the salmon steaks with a sheet of foil. Make sure there is ample foil to wrap around the steaks.
Mix together all the ingredients for the marinade in a small bowl.
Place the salmon steaks in the baking tray and pour half of the marinade over one side of the steaks. Turn the steaks over and pour the rest of the marinade over the other side.

Loosely cover the steaks with the foil and place in the centre of the oven for 20-30 minutes until cooked. Sprinkle over the coriander leaves and serve hot with boiled baby potatoes and green beans.
