vanilla_small_IMG_5711Lassi is the ‘milkshake of India’. Made with cold yogurt and tempered with either sweet or salty ingredients, it is drunk mainly in northern India during the hot summer months. Lassi flavourings include rose water, mint, cumin, black pepper, cardamom and these days even vanilla. Here’s a recipe using natural vanilla paste. The lassi comes out extremely creamy and incredibly indulgent.

Ingredients:

Servers 2-3

100m single cream
200ml full-fat milk
400ml natural unsweetened yogurt
2 tsp Natural vanilla paste
2 tsp sugar (optional)
Freshly grated nutmeg, to serve (optional)

Preparation:

Whisk the first five ingredients together and serve chilled. Garnish with freshly grated nutmeg, if using.
