coconuttreats_p170_219_smallMade with only two ingredients, this simple recipe is bursting with delicious sweetness. You can use shop-bought coconut powder, but making your own from desiccated coconut is easy and adds a distinct freshness to the finished dessert.

Ingredients:

Makes 10-12 pieces

125g desiccated coconut

100ml/6½ tbsp condensed milk

Preparation:

Put the desiccated coconut in a spice mill and grind to a fine powder.

Pour the condensed milk into a small saucepan and warm over a low heat. Add 100g/3½ oz/ ½ cup coconut powder and simmer for 2-3 minutes, stirring constantly, until the mixture leaves the sides of the pan. Watch carefully so it does not burn.

Remove the pan from the heat and set aside until the coconut mixture is just cool enough to handle.

Sprinkle the remaining coconut powder onto a plate. Wet your hands and shape the mixture into 10-12 balls of equal size. Roll each ball in the coconut powder to cover them evenly. Serve immediately, or transfer to an airtight container and refrigerate for 5-6 days.
