Chajá - Peaches and Cream Meringue dessert from Uruguay

Will it be 1950 all over again for Uruguay, the year when they last lifted the Jules Rimet?

Regardless, they have Suarez, a tough mental strength and a delicious dessert known as Chaja. I call it a cross between a tiramisu and a British Eaton Mess.

Serves 4-6
 
Ingredients:

500ml double cream
8-10 sponge fingers
4-6 tbsp rum
4 meringues nests (50g/2oz), very roughly broken up
400g can of peach slices in juice, drained
5 tbsp caramel or toffee sauce

   
Method:  

Whip the cream until stiff and set aside.
Place the sponge fingers on a serving platter and sprinkle over the rum, if using.
Spread 3 tablespoons of the caramel on top of the sponges. Then place half of the meringue pieces on top. Next, scatter half of the peaches followed by the whipped cream.
Roughly fold together with a large spatula or spoon, just a few times to marble everything through.
Pile the remaining peaches on top with the remaining meringues and dot the remaining caramel over. Serve chilled.
If storing in the refrigerator, make sure the dessert is covered.
