Griddled Chicken in Mushroom and Black Pepper Sauce

Serves 4
 
Ingredients:

3/4 tsp freshly ground black pepper
2 tbsp plain flour (maida)
4 boneless and skinless chicken breasts, cut into 4cm pieces
2 tbsp olive oil
1 tbsp butter
3-4 shallots or 1 large onion, chopped
8-10 mushrooms, sliced
4 garlic cloves, chopped
200ml single cream
a pinch of nutmeg
1/2 tsp freshly ground black pepper
1/4 tsp salt

   
Method:  

Add 1/4 tsp of the black pepper and a pinch of salt to the flour and mix.
Dredge the chicken in the flour by adding the chicken pieces to the flour and coating them well.
Heat a frying pan or a skillet on a medium heat and add the oil. When the oil is hot enough add
Saute the chicken for 5 minutes on each side until golden brown.
Remove from pan and drain on kitchen paper.
In the same pan tip in the butter and add the shallots or onion and cook for 3 minutes. Then put in the mushrooms and garlic and sauté stirring frequently until the mixture looks golden brown. Season with the remaining 1/2 tsp of black pepper and stir in the cream. If you’d like more sauce, add about 4 tbsp of water and cook for another minute.
Place the chicken pieces on a plate and top with the mushroom cream sauce.
