Citrus Fruit Salad

This is a tangy yet creamy salad that makes the most of any apples and oranges which could be lying in the fruit bowl.

You can replace them with pineapples and mangoes for a more exotic flavour.

Serves 6

4 oranges, segmented
2 apples, sliced
Salt, to season
2 tbsp runny honey
100ml orange juice
1/2 tsp crushed Black pepper
3 tbsp Extra Virgin Olive Oil
200g feta cheese, chopped
2 handfuls or bags of fresh green salad leaves
150g green or pimento stuffed olives
2 tbsp Balsamic vinegar


Place the fruit in a bowl and lightly salt all the fruit. (this brings out the flavours). Mix it up and set aside.
In a bowl, mix the honey, orange juice, crushed black pepper, balsamic vinegar and Extra Virgin Olive Oil. Mix in the feta cheese.
Place the salad leaves in a large salad bowl. Then add the olives followed by the fruit and the salad dressing with the feta cheese.
Pour the dressing over the lettuce leaves.
Using two forks, coat the lettuce leaves and fruit with the salad dressing.
Serve immediately.
If you’re planning to serve the salad after some time, coat the salad with the dressing just before serving.
