Serves 2-4

1 tbsp groundnut oil
1/4 tsp brown mustard seeds
1/4 tsp cumin seeds
3 medium green peppers, seeded and sliced
1/4 tsp chilli powder
1/4 tsp turmeric
1/4 tsp salt
4 tbsp gram flour (besan)
1 tsp coriander leaves, washed and chopped

Heat a frying pan on a medium heat and add the oil. Tip in a few of the mustard seeds. If they start to crackle and pop, add the remaining mustard and cumin seeds. Then add the sliced peppers and continue frying for about 4 minutes. Sprinkle in the chilli powder, turmeric and salt and fry for a few more seconds.
Mix in the gram flour spoonful by spoonful, and stir until it has browned, taking care not to let it burn at the bottom of the pan.
Take it off the heat, scatter over the coriander leaves and serve immediately with pitta bread and a dollop of natural unsweetened yogurt.

The mustard seeds can be replaced with extra cumin seeds.
To sharpen the flavour, add 1 tsp of lemon juice.
