Tomato Soup - Tamatar Shorba

A Tamatar Shorba is a North Indian soup which is created by cooking tomatoes with whole spices.

This version is an aromatic recipe that’s great in the winter as well as the summer.

Serves 4

2 tbsp groundnut oil
8-10 peppercorns
2 bay leaves
1 cinnamon stick
1 onion chopped
2 garlic cloves, chopped
600g tomatoes, chopped
A pinch of chilli powder (optional)
½ tsp salt
1 tsp sugar (optional)


Heat the oil in a heavy-based saucepan and add the peppercorns, bay leaves and cinnamon. Stir for a minute, then add the onion and garlic.
Fry for 6-8 minutes till the mixture is golden brown.
Tip in the tomatoes and fry for 4-5 minutes to soften them. Add 825ml of hot water and mix.
Cook for 5 minutes and add the chilli, if using, then the salt and the sugar, if using. Mix well and tip in the ginger and simmer for 5 minutes.
Blend the tomato soup, then strain.
Serve hot.


You can add a few croutons on top for that extra crunch.
