Roasted Corn on the Cob – Bhutta Sika Hua

Across India, roadside vendors roast corn cobs on hot charcoals or by placing them in hot sand: you cannot avoid the delicious woody aromas wafting across the hustle and bustle of people and traffic.

Corn is grown in small inland pockets throughout the country, but the state of Uttar Pradesh is the largest producer. It is harvested from November through to January.

Serves 2

2 corn cobs, outer layers removed
Knob of butter
Pinch of salt
Pinch of chilli powder
2 tsp lemon juice


Place the cobs on a naked flame on a hob or a barbecue. Alternatively, place them under a hot preheated grill. Using tongs, carefully rotate them 4-5 times to make sure they cook evenly. When they are tender and well browned, smear with butter, salt and chilli powder. Finally sprinkle with the lemon juice and serve immediately.
