Scrambled Eggs with Feta Cheese

If you need a boost of calcium in your diet, you can’t go wrong with this breakfast served with wholemeal toast.

If you cannot get hold of feta cheese, use cheddar or a piece of grated paneer (Indian cheese). I eat this with crackers.

Serves 2
 
Ingredients:

3-4 eggs or 4 egg whites
1 tbsp milk
a pinch of salt
1 tsp olive oil
1 tomato, chopped
2 tsp crumbled feta cheese
a few chopped chives (optional)
3-4 torn basil leaves (optional)
a pinch of freshly ground black pepper

   
Method:  

Beat the egg, milk and salt in a bowl until the mixture becomes frothy. Heat a frying pan on a medium heat and add the oil. Tip in the egg mixture. Cook for a minute or two, stirring occasionally until they’re half done. Mix in the tomato. Cook through and then stir in the feta and basil and chives, if using. Sprinkle over the black pepper and serve.
