Whole Oat Cookies

This is a biscuit which is quite chewy yet crumbly with hardly any sugar.

The predominant sweetness comes from the cinnamon and the vanilla and the raisins if you like them.

1 cup medium or whole oats, (available from health food shops) (150g)
1/2 cup wholemeal self-raising flour, (60g)
1 tbsp sugar or 1/2 tbsp runny honey
1 tbsp unsalted butter
1/2 teaspoon ground cinnamon
1/2 vanilla extract
8-12 raisins (optional)


Preheat the oven to 160C/320F/Gas Mark 3
Place the ingredients in a bowl and mix well.
Add about 2 tbsp of hot water from the kettle to bind the mixture.
Using your hands, bring the mixture together as a dough.
Turn the dough out onto a lightly floured work surface and roll out to a 0.5cm/¼in thickness.
Using a cookie cutter, cut out shapes or circles from the dough and place them onto the lined baking tray.
Transfer the biscuits to the oven and bake for 15-18 minutes, or until golden-brown.
Set aside to cool on a wire rack, then serve.
