Butterless Mixed Fruit Loaf

Makes approximately 10 large slices
 
Ingredients:

250ml or 1 cup of tea, made from a tea bag
450g mixed dried fruit
125g soft brown sugar or Demerara
1 tsp cinnamon
1 level tsp mixed spice
25ml brandy or whisky (optional)
1 egg
250g plain flour, sieved
1 tsp bicarbonate of soda

   
Method:  

Make the tea and allow it to cool.
Place the dried fruit in a large bowl and mix in the sugar, cinnamon and mixed spice. Stir in the brandy or whisky, if using. Then mix in the tea.
Cover and set aside for half an hour to infuse.
Preheat the oven to 180C/gas mark 4. Grease and line a medium to large (approx 20cm x 11cm) loaf tin with baking paper.
Beat the egg and then mix into the soaked fruit. Add the flour and bicarbonate of soda and combine. The mixture will appear a little sloppy.
Place in the tin and put in the centre of the oven for 45-50 minutes until firm at the top.
Allow to cool. Slice and serve with a cup of tea or a glass of milk.
