Cherries with Vanilla Ricotta and Toasted Almonds

Ingredients:

2 tbsp ricotta cheese
2 tbsp icing sugar
1/4 tsp vanilla extract
3/4 cup or 180ml double cream, whipped
1 tbsp toasted slivered almonds
12 frozen pitted cherries, sliced in half and defrosted

   
Method:  

In a bowl combine the ricotta cheese and sugar and whip until smooth. Add the vanilla and fold in.

Whip the cream until stiff and fold into the ricotta mixture.

Put the cherries at the base of each dish and top with the ricotta mixture followed by the almonds and serve.
