Lassi is the ‘milkshake of India’. Made with cold yogurt and tempered with either sweet or salty ingredients, it is drunk mainly in northern India during the hot summer months. |

| Lassi flavourings include rose water, mint, cumin, black pepper, cardamom and these days even vanilla. Here’s a recipe using natural vanilla paste. The lassi comes out extremely creamy and incredibly indulgent. |

100m single cream |

Whisk the first four ingredients and the sugar, if using, together and serve chilled. Garnish with freshly grated nutmeg, if using. |
