Sweet Cranberry Pickle

This is a sweet and tart pickle using only three spices to bring out the flavours of the fresh cranberries.

It’s something that can be prepared within minutes. The longer the cranberries are marinated the better the pickle tastes. It can be served with cold meats and cheese or as a side relish for a Christmas dinner.

Serves 6-8

3 tbsp olive oil
1 tsp brown or black mustard seeds
1 tsp chilli powder
1 tsp turmeric
1/4 tsp salt
225 g fresh cranberries, washed
1 tsp brown sugar


Heat a heavy-based saucepan on a medium heat and add the oil. Tip in the mustard seeds and when they begin to crackle and pop add the chilli powder, turmeric and salt and mix. Stir well and add the cranberries and sugar. Cook for 2-3 minutes. Place in a sterilized glass jar with a lid and store in the refrigerator for a month. Remove from the refrigerator 15 minutes before serving.
